This is where I tell you weird things about Courtois! I’ll add to this as things come up. Enjoy!

The “cracks” on Courtois’s face are actually quite sensitive, and generally not in the pleasant way. Having someone else touch them tends to be quite painful for him. As such he really doesn’t like physical contact with them.
Those “cracks” are prone to acting up and causing him pain, like an arthitic joint. This generally happens when he’s near a large or strongly-emitting source of aether. This isn’t always reliable though, so using him as an aether detector probably isn’t worth the pain it might put him through.
Weirdly, despite causing him pain when there’s too much aether near him, sources of aether touching those “cracks” tend to calm them temporarily. He’s been known to place Ice Shards (as in the smallest of the elemental shards players can collect) on these marks to both calm the aether “leak”, and to soothe the skin around the cracks.
Neither of the two places that Courtois spent his formative years, Sharlayan and Ishgard, are particularly known for their stunning cuisine. Sharlayan puts the nutritional value of food before its taste, and Ishgardian food is often bland and tasteless. Thusly Courtois doesn’t care for spicy or sharply seasoned foods—they tend to give him the hiccups.
